Seasonal and Spontaneous. Marc Lanteri's cuisine is firmly linked to seasonality: a farm-to-table principle with a minimal footprint in creating his dishes. Lightness and spontaneity in execution, joyful pleasure in the cooking, playful exuberance in textures, and freshness in every bite. His approach emphasizes sustainability, minimal waste, and direct, respectful relationships with each of the local growers, makers, and artisans who contribute to the restaurant. Constantly evolving and centered in his approach, this is Marc's third restaurant concept, and has grown out of his experience and history in his prior Piedmont locations in Mondovi Piazza and his Barolo restaurant in Grinzane Cavour.
